Diane Velarde Hernández brings us another tasty recipe. This time it is “Tortas de Camarón with Nopales,” (Shrimp Fritters with Cactus). Now this may sound a bit off-putting–cactus?  But Latinopia vouches that this meal is really scrumptious and well worth the cooking. The recipe has been divided into two parts. This first part shows how to cook the prickly pear cactus and make the chile broth. The second part shows how to make the shrimp fritters. The whole meal will take about two hours to prepare. Enjoy!
